LoR 08 - Instant Tomato Chutney

(LoR - Leftover Remake )

A quicky post on an even quicky remake.

Instant tomato chutney with leftover tomato thokku.

Had posted  a remake version of the Tomato thokku (recipe "here") to make Egg Burji some time back. This chutney is yet another version I do almost regularly .

Infact, i always prepare the simple tomato thokku a bit more than necessary to make way for the remakes..either of them...depending on what i have in hand to pair up with.

If for some chapathi, i go for the egg burji remake, but

if for dosa or idli, its this chutney version.

Its basically just two steps involved :

Take the tomato curry (thokku) in a mixer , add some grated coconut. Have used dessicated ones in here, as i was short of the fresh ones. Either ways , its fine.

Give a pulse, and thats it.  Maybe, you can add in a green chillie if required, for some extra spice, but I dont as my kids are the spice-repellant type.

Salt..yes..a tad bit more could go in.

Quicky, yeah ?

;)

Easy Egg Paratha with hidden veggies

This goes out to all mommies of fussy eaters out there .

The no - fuss, no mess bite-on-the-go rollon version of chapathi vegetable platter.

Our boys definitely like to have chapathis , but at the same time...they are not much keen on the "tear- dip-munch" routine of having it .

 ROLLS.

Thats how chapathis need to be fed, in our household.

And many a times, the demand is for "motta- chapathy" (rolled with omlette inside). The request is never turned down..coz, into the egg mix would have gone all the vegetables that was supposted to be , at the very first place, to be served with the chapathy. Be it anything..from dal to sabji..it would be mashed and mixed with the egg.

So, this time...for a change...decided to try the egg the other way round.
Not on the inside, but on the outside.

The ingredients are all set.

Beat the egg and add some tomato ketchup to it. Pull out any vegetable curry that you have in hand.

Had some cabbage-beans thoran (click "here" for the recipe) which was prepared for lunch to be served with rice..so, straight it went into the egg. Salt and pepper to taste. Do check the salt level. you dont need it much, coz the thoran/poriyal already has all the flavours in there.

Dip the chapathi well in the egg veggie mix.

Turn over and let the egg coat well on either side.

Dab a tsp of oil on  a flat cooking pan, and lay the chapathi .
Add some more veggies at top.

Turn over till the egg is cooked well on either side.

Roll and off it goes , straight into the plates. No side dishes...no dipping sauces needed. All you do is bite bite till you are done and take my word....

The kids will definitely enjoy it and ask for more.

Mine...just did ! They were not very pleased seeing the vegetable curry along with the egg..but once eating this..they defintiely wanted more servings.

Well ..not just Mr. President, but felt me too wanted to have that banner flying high up..then !

Carbs, protein, vitamins, fibre...have all gone in one single pack..no mess..no fuss. Just "mamma...can I have one more of this please..." to be heard from the dining table.

LoR: 07 - Egg Burji with leftover Tomato curry

LoR 07  - Leftover Remake Series

Quick Egg Burji with leftover Tomato Curry.

This has become kindof customary in our household now. Each time we have this tomato curry on board, as a dinner side for chapathi, a small portion of it will be moved aside for this remake .
Can go in as a dish by itself, or even sandwich filling.

To make the tomato curry ,

You need :
Oil (coconut oil) 1 tablespoon
Mustard seeds 1 teaspoon
Curry leaves few
Green chilly 2
Onion (sliced) 2
Turmeric powder 1/4 teaspoon
Chilly powder 1 teaspoon
Coriander powder 1 teaspoon
Tomato 4
Salt to taste
Water 1/4 cup

Method
1. In a pan heat oil, add mustard seeds. When they splutter, add green chillies and curry leaves. Saute it for a few seconds.
2. Then add sliced onions and saute it till they become brownish in colour.
3. Next stage, add all the dry powders, turmeric powder, chilly powder and coriander powder. Saute till the raw smell goes off.
4. Now add chopped tomatoes and saute till oil starts separating. Add little salt at this stage.
5. Now add 1/4 cup water, bring it to boil, simmer the stove, cover with a lid and leave it to cook for some time.

May add some coconut milk too to it at this stage, but its optional. I have not added in here.

(these two does indeed go well together)

For the remake, in a wok heat a few tbsps of oil and add 3-4 beaten eggs.

Scramble ..scramble !!!

Once the eggs are almost cooked, add in the leftover tomato curry.
I do not have any specific measurements, just as you see in the picture..kindof what is enough to well coat the eggs.
You do not need any additional spices as its already there, in the curry. May be an extra dash of salt, would be sufficient.

Mix....Mix !!!!

shouldn't we ???

Alright...in goes, some peas too...

Mix..Mix...Mix !!!

Serve HOT..HOT...HOTTT !!!

LoR - 06 : Inji-Puli-Idli

Leftover Remake Series - 06

Puli-inji  (ginger cut to tiny pieces and cooked in spices and mainly tamarind sauce) is one of the  main ingredients of the Kerala Ona-sadhya, and ask me which is my favourite of all the n number of dishes we have served on the banana leaf for the sadhya, the answer is again ..Puli-inji.  Infact, I don’t mind adding  the tangy flavouring of the tamarind in literally anything, esp upma, veggie dishes, chutneys....

Had some idlis leftover from morning breakfast and thought about some remake for it. Idli Manchurian, Idli 65….the options were various, but deciding on the flavor… you know how it is, your mind keeps wandering around your favourites (the selfish me, afterall) and some how want to bring those on board.

(no wonder i love this thing ! )

Wanted to get tamarind somehow in…that was for sure..either tamarind paste combined with something and that’s when I happened to notice some puli-inji (recipe shared above in the link) in the refrigerator. Life made easy….was what came to mind, after some thought.
(look alikes)

And  Tamarind + GInger = Puli - Inji.
(a borrowed image of the same from google)

You need
Leftover idli’s, cut to small pieces
Puli-Inji (Ginger-tamarind chutney)
Chopped garlic
Chopped shallots
To temper
Mustard seeds
Cumin Seeds
Seseme seeds
Asafoetida seeds (optional)
Curry leaves
Dry chilles

How to:

Splutter some mustard seeds in oil, followed by cumin, seseme and asafoetida seeds.

Once tempered, add the rest – chopped garlic, onions, curry leaves and dry chillie. Saute for a few minutes till the shallots turn golden brown.
Now add few spoon fulls of the puli-inji and few spoonfuls again of water to make it loose.

When the mix gets to boil, add the idli-cuts and mix well till combined.

Garnish with some chopped coriander leaves and serve hot as such.

Add some fried cashewnuts too for added taste.

It has all the flavours..the spicy, the tangy and you don’t even need any other side chutney or sauce for it.
Idli-ki-kasam !!! ;) ;)

Marshmallow Candy Cane treats for Christmas

The Candy Cane is one of the most familiar symbols of Christmas.

It dates back to 1670 in Europe but didn’t appear in the U.S. until the 1800s.

The treat we see today, where the shape is Jesus’s hook to shepherd his lambs and the color and stripes hold significance for purity and Christ’s sacrifice, became common in the mid 1900s.[6] (me too got to know it only now ;) )

Marshmallow -  Candy Cane Pops

You need

Candy Canes
White cooking chocolate
(red and green candy melts would be perfect for this, but that we dont get it here, had to add a drop or two of red and green food colour to the melted white chooclate)
Sugar
Red and green food colour
Marshmallows (large sized ones)

To do

Trim irregulary, the top edges of a marshmallow to make it look like an umbrella (opened, of course)
Insert a candy cane into the marshmallow.
Now melt the white cooking chocolate about 10 secs at a time, and divide it into two parts.
Add red food colouring to one and green colour to the other.

Take sugar in two bowls and add the green and red food colours to each. Some quick coloured sugar instantly done.

Now dip the marshmallow into the melted chocolate, gently let any drippings fall off the marsh...and roll in the same coloured sugar.

(sorry this goes as a very short quicky post...running out of time...)

Hearty seasonal greetings sent your way ....

LoR 05 - From Honey Creeps to my fav. childhood snack

Left over Remake - 05
One single mix and 3 different snacks! Isn't that great ??

From this..(honey crepes)

to this....(banana fritters)

and finally..my favourite right from childhood...well...no specific name for it. It something that my mom used to make with leftover crepe batter.

I think as kids..we are very much happy when our parents does things which we really like..as if they were just reading our minds. And it feels even better when the parents interchange their roles.

While we were small...and as occasional treats during vacations…our mother used to take us to the “Ernakulam Children’s Park” and we appreciated it even more…coz, it was mummy who wake taking us..unlike our dad, who always takes the “driver” role. The visits were definitely widely spaces on the timescale..so that very much added to the excitement factor. The mini jeeps, scooters and the signal lights to stop your vehicles on the mini roads that you drive them….we thoroughly used to enjoy each visit and badly look forward for the next.

From the park…the next destination would be the nearby “Indian Coffee House” and the same order each time – vegetable cutlets…which, better would be said as “beetroot” cutlets. They were really pink inside.
Fast forward…..location shifts to the middle-east….and its the next generation park goers.
Might be coz of how deeply I cherish those good times..( remember I said..parents interchanging roles) that I do love to do the same with my boys…and wishing within..that they too would (might) cherish these times when they are grown up too. Do take them to the play area just across the road and its got all the restaurants and coffee shops just side by side. An occasional visit to the Little Ceasers Pizza shop…its mom’s n kids day out. Of couse, we would have a take away ordered for the Dad too…or some doughnuts for the boys (a coffee free for the mom ! from Dunkins). ;)

A lazy weekend morning..Saturday..atleast I don’t have to work 6 days a week, unlike the Dad.
back to our childhood favourite evening snacks and this was how my mom used to get it done. From this...to that..and again that !!!

For the honey butter crepes -
All Purpose Flour - 2 cups
Egg - 1
Honey - just enough to make it sweet as per your taste
Milk - as much to make the batter loose and of pouring consistency

Mix all these together well and make crepes.

Can add a dash of butter to it and fold or roll.

Simply quick breakfast/snack.

Version 2 : Payampori - banana fritters.

Add a tsp of turmeric powder to the batter.
Cut bananas into half length wise and then half across.
Dip each banana cut in the batter and deep fry in oil.
Strain excess oil on paper towel

Batter still remaining and no more bananas? worry not..

Version 3: Just scoop a spoon full of the batter straight into the oil and fry on either sides till slightly golden brown.

make a lovely tasty snack by itself..

Honey Butter Crepes

Payam pori
..and....

Batter fried pancakes (well..so i shall call it)
